Except for the occasional down and dirty burger, I am not a regular red meat-eater. If I can buy grass-fed beef or bison, however, I’m all in! And even if I can’t, I am learning to compromise with my husband’s culinary likes for the sake of simplicity and efficiency in cooking in an RV.

Texas Beef with Butternut Squash
A can of fire-roasted tomatoes, onion, garlic, diced green chiles, ancho chili powder, cumin, oregano, and cocoa powder give this slow-cooker dish a kick. I like to add some greens the last half hour. Serve with polenta or brown rice.
Yes, this is a paleo recipe, simple and complete in itself, courtesy of paleoleap.com. The apple, honey, and garlic give this dish a sweet rich flavor. Add a side carb of your choice.
I omitted the paleo-friendly coconut aminos and tapioca starch. According to thekitchn.com, coconut aminos are a gluten-free and low sodium alternative to soy sauce.

A quick and easy recipe with ground beef, onions, garlic, bell peppers, tomato paste, diced tomatoes, kidney beans, chili powder, and cumin. Garnish with cheddar cheese, sour cream, and avocados. When available I purchase grass-fed beef or bison.

This mildly spiced comfort food recipe makes 2 batches so you can serve one and freeze one. I use grass-fed beef or bison when available.
