Pasta is my go-to comfort food. I even like it raw! I prefer dishes that are not smothered in red sauce, cream sauce, or butter. A little salt, pepper, olive oil, and bread crumbs with my pasta makes me happy. Here are some of my simple, tried, and true favorites. Jeff likes to sautée some chicken or sausage on the side to satisfy his craving for meat. Click the link for the recipe.
Farfalle with Mushrooms and Spinach
So, so easy and quick… Onion, garlic, ground pepper, and thyme add flavor. Top with shredded Parmesan or Asiago.
Spaghetti, Cauliflower, Capers, and Lemon
Thyme, chicken broth, and bread crumbs are the magic ingredients.
Turkey Sausage and Arugula Pasta
Use whole wheat pasta for an even healthier version. You can substitute spinach for the arugula.
A light sauce prepared with a can of diced tomatoes… From rvgoddess.com, a site I highly recommend for not only recipes, but good, practical RVing advice!!!
Onion, white wine, chicken broth, Parmesan cheese, a little heavy cream, and fresh basil… How can you go wrong?
Gnocchi, Bacon and Roasted Cauliflower
Roasted cauliflower and capers team up with bacon, gnocchi, and pine nuts… Mmm…
Skip the layering. Prepare fusilli or rotini pasta. Sauté onion, garlic, and mushrooms. Add tomatoes and spinach. Toss and dollop with ricotta.
Skillet Butternut Squash, Chicken Sausage, and Penne Pasta
The butternut squash makes this sausage and spinach pasta so creamy and delicious.
