Vegetarian and Vegan Vittles

My brother, Ken, is a vegan and he introduced me to a whole new way of cooking. I never knew you could make a delicious “cheese sauce” using squash or cashews! I love the challenge of creating delicious food without using any meat or dairy products. Besides, the leftovers are great for lunch or reheating for supper again. Jeff does not share my enthusiasm.
